La Matanza is one of  the most popular traditions in the province of Extremadura in Spain,  around the preparation of the famous Iberian Pig. The celebration consists in the selection of the pig, the sacrifice of the animal, the beef stew and the preparation of Chorizo and Jamon Serrano (Iberian Ham). All this ritual it happening inside of the family environment.
